This is one of our go-to summer sides — it’s fresh, colorful, and lets the olive oil shine.
Ingredients:
• 1 zucchini, sliced
• 1 yellow squash, sliced
• 1 red bell pepper, chopped
• 1 cup cherry tomatoes
• 1 tbsp Fresh Press Farms olive oil
• Salt, pepper, and Italian herbs to taste
• Crumbled goat cheese (optional)
• Fresh basil for garnish
Instructions:
• Preheat oven to 400°F
